The burrito is a whole lunch folded into one hand, and National Burrito Day sends people out looking for a proper one. Go to the counter that takes the longest and order the biggest thing on the board.
No founder, establishing act or first observance for National Burrito Day was located in the indexes checked, which included the Federal Register and HathiTrust's full-text catalogue. The day is kept going by restaurant chains, which announce burrito promotions for the first Thursday in April.
National Burrito Day belongs to a food whose paper trail starts in the wrong place. A Mexican dictionary published in 1895 filed the burrito under Guanajuato, in the centre of the country rather than the northern border it is usually credited to. The same entry told readers that in Cuernavaca and Mexico City the thing was simply called a taco.
So the oldest burrito on paper is a local word for something else. The big foil wrapped version was assembled much later and much further north.
The day itself is younger, and it belongs to the counter rather than the dictionary. Restaurant chains are what carry it through each April.

Febronio Ontiveros opened a corner grocery at 20th and Folsom in September 1961 and called it El Faro, the Lighthouse. On his first day a group of firemen from a station down the street came in wanting sandwiches. He did not have any.
He was ready the next day. Large flour tortillas were not sold commercially then, so he overlapped three six inch ones and charged a dollar. San Francisco's own Legacy Business file puts that account under burrito legend, and quotes a 2017 SF Weekly piece dating the city's first retail burrito to 26 September 1961.
El Faro is not the only one telling it. The same document records that nearby Taqueria La Cumbre claims the Mission style burrito too, then sides with El Faro on a burrito writer's verdict that all signs point there.
The style is why the argument matters. A Mission burrito starts with a large flour tortilla folded around a variety of ingredients and served in foil, and the city dates its rise to the Mission District in the 1960s.
Southern California came at it from the other end. Duane Roberts was nineteen and working at his family's meat company, Butcher Boy, which sold patties to one of the first operating McDonald's, in San Bernardino. A butcher on the floor asked why they did not make a burrito.
Roberts put the year of that question at 1956 when he told the story to the Orange County Register in 2007. The company already ran blast freezers for its barbecue beef. So he carried the burritos out on the road frozen and fried them in front of buyers.
The day arrives at the end of that story with no founder, no first observance and nothing explaining the date. A holiday listing page for it was already being archived in April 2019, a floor and nothing more.
What fills the gap is the restaurant trade, which treats the first Thursday in April as a date to work. The burrito was on paper long before anyone thought to give it a day.

The word sandwich did not stretch to a tortilla
Panera Bread held a lease clause stopping a Shrewsbury shopping centre from renting to another sandwich shop, and tried to use it to keep a Qdoba Mexican Grill out. Massachusetts Superior Court Judge Jeffrey Locke wrote that a sandwich is not commonly understood to include burritos, tacos and quesadillas, and the wire report of the decision put the difference at two slices of bread against one tortilla.
Chipotle Mexican Grill announced its Burrito Vault game for the 2026 observance, the third consecutive year it had run one. The company put more than $2 million in prizes behind it and waived delivery fees for the day.
In July 2024 the city added El Faro to its Legacy Business Registry, which asks for thirty years of trading in San Francisco, a contribution to a neighbourhood's identity, and a commitment to keep the features that define the business. The nomination came from Supervisor Hillary Ronen, and 416 businesses had been added to the registry by then.
I know of no chef or culinary historian who would call a burrito a sandwich. Indeed, the notion would be absurd to any credible chef or culinary historian.
I loved Mexican food, but I had no idea what a burrito was.

The Diccionario de mejicanismos carries two burrito entries on page 98. The second, tagged to Mexico City, defines it as maize that bursts open into a rose shape when toasted.
El Faro's ownership record runs from Febronio Ontiveros to the City and County of San Francisco in 1999, then to a private buyer, then to its current owners in 2007.
Roberts said Harry Snyder told him he would never change his menu. Snyder then pointed him at Mel's Drive-In, which bought a large amount of Butcher Boy's barbecue meat.
A search of the California Digital Newspaper Collection for 1846 to 1900 returns four hits for burrito, and reading them shows four garbled scans of other words rather than the food.
El Faro means the Lighthouse in Spanish. When the restaurant was listed, the diagonal blade sign carrying a lighthouse, installed in 1962, was among the features the city's Historic Preservation Commission recommended safeguarding.
